Mother's Day Brunch

BLAK’s North Memphis Slap Yo Momma Apple-Cinnamon Coffee Cake™
 
Cake
1 ½ cups wheat flour
1 c raw sugar
1 ½ tsp baking powder
1 ½ tsp ground cinnamon
½ tsp salt

¾ c 1% milk
1 tbsp oil
2 tbsp applesauce
1 tsp vanilla
1 large egg, beaten
1 peeled and diced apple (Granny Smith or Gala)
 
Topping
¼ c packed brown sugar
2 tbsp flour
½ tsp ground cinnamon
2 tbsp applesauce (recipe calls for butter)

Preheat oven to 350. 
Combine flour and next four ingredients (through salt) in a large bowl, stirring with a whisk. Make a well in the center of mixture. Combine milk, oil, applesauce, vanilla, egg and apple in separate bowl; add liquid mixture to flour mixture stirring until just moist. Pour batter into an 8-inch square baking pan (or pie pan) coated with cooking spray. In a separate bowl stir together brown sugar, flour, cinnamon and applesauce. Drop topping onto cake and swirl with fork. 
Bake at 350 for 45 minutes. Cool in pan for 10 minutes before serving. Serve warm.

BLAK’s Infamous Royal Feast Quiche™ 
 
½ lb turkey sausage (casing removed)
½ c diced onion
1c shredded cheese
5 eggs, scrambled
½ c milk
1 refrigerated pie shell

Preheat oven to 350.

Brown turkey sausage and onion in skillet until onion is translucent and sausage is no longer pink, let cool. Combine milk, eggs and 3/4 c of cheese; salt and pepper to taste. Add sausage and onion to egg mixture and pour into pie shell; sprinkle the remaining cheese on top. Bake at 350 for 45 minutes. Serve warm and garnish with fresh fruit (and a mimosa or ‘drunken juice’ if you’re really on your pimpin!).

 BLAK’s “Baby-Making” Drunken Juice™

 Add coconut rum to any of the following FRESH juice combinations

2 Granny Smith apples + 1 kiwi
1/2 pint strawberries + ½ pineapple
2 ripe pears + bunch of green grapes + ½ lime
2 oranges + ½ pineapple
 

***warning, coconut rum can catch up with you, so please freak responsibly***


Salsa Chicken Dinner

1 jar salsa
1 can black beans
4 chicken leg quarters
1 can diced tomatoes w/ garlic & onion
2 tbsp olive oil
2 c chopped spinach
1 roma tomato, chopped
½ cucumber, sliced
4 tbsp ranch salad dressing
salt
pepper
1 tbps chili powder

Heat oil over medium heat in large skillet. Season chicken with salt, pepper and chili powder.  Brown chicken on both sides 4-5 minutes each, over medium heat. Pour can of tomatoes (including juice) and ½ jar of salsa over chicken; cook over medium heat for 35-40 minutes or until juices run clear. 

Warm beans over medium-low heat with 4 tbsp of salsa. While chicken is simmering in tomato sauce and beans are warming, chop salad ingredients and toss with combined ranch dressing and 4 tbsp salsa.

Sage and Cream Turkey Fettuccine

3 oz dried spinach and/or wheat fettuccine
¾ c. fat free sour cream
2 tsp wheat flour
¼ c reduced sodium chicken broth
½ tsp dried sage
¼ tsp ground black pepper
Non-stick cooking spray
6 oz turkey breast, cut into bite-size strips
¼ tsp salt
1 c fresh mushrooms
2 green onions, sliced
1 clove garlic, minced

Cook pasta according to package directions; drain and set aside. Meanwhile in a small bowl, stir together sour cream and flour until smooth. Gradually stir in broth until smooth. Stir in sage and pepper; set aside.

Coat an unheated 8-inc skillet with non-stick cooking spray. Preheat over medium-high heat. Sprinkle turkey with salt. Add turkey, mushrooms, green onions, and garlic to hot skillet. Cook and stir about 3 minute or until turkey is no longer pink.

Stir sour cream mixture into turkey mixture in skillet. Cook and stir until thickened and bubbly. Cook and stir for 1 minute more. Toss turkey mixture with cooked pasta and serve.
